Jurassic Banana Bread Loves
Ok so these were supposed to be a bit of cheeky fun for a fun day at The Pavilion Club and they won a first prize - lol - a few of you were there and got to taste them and asked for the recipe. Well here it is :)You will need:1 cup flour (I used Kamut bread flour - low gluten)1/2 cup of raw oats1/2 cup of protein powder (I used Vanilla Protein Powder)125 g vegetable margarine2 eggs (can use an egg substitute if preferred - my favourites are Flax or Chia seeds - 1 tbsp ground Flax or Chia seeds +3 tbsp Water =1 egg. Grind the seeds in a coffee grinder, and mix with water. Allow to rest till it becomes gelatinous, then use)4 ripe bananas1 cup sugar ( I used coconut sugar)1 tsp baking powder1 tsp bicarbonate of soda1/2 tsp cinnamon1 tsp vanilla essence1/4 tsp ground chilli - if you like a bit of heatpinch saltPre-heat the oven to 180 degrees.Cream margarine and sugar together, add mashed banana and mix well. Add dry ingredients, alternating with egg. Dissolve bicarb into 1/4 cup of warm water and add to the mixture, mix well.Pour mixture into floured small or large loaf tins - makes one large loaf or 8-10 small loaves.Bake at 180 degrees for 40-60 minutes.If you are using small loaf tins they will take around 20 minutes to bake, just keep an eye on them.Slice and enjoy!
